Efo Riro is a traditional Vegetable Soup of the Yoruba Tribe in Nigeria. It is well known for its savory taste and richness. It is actually the Yoruba version of the Efik's Edikang Ikong Soup, but with a big twist ☺.

Efo Riro is prepared with assorted meat, fish, large quantity of green vegetables and peppers(tomatoes are added, sometimes). This is one of my go-to dishes , because I'm a big fan of vegetables. This spicy ,savory soup can be accompanied with  bolus meals, such as Amala, Elubo, Pounded yams, Fufu (akpu), Eba or Tuwo Shinkafa .It also goes pretty well with boiled Rice, plantains or yams.

 Although it is a Yoruba soup, Efo Riro is enjoyed in all parts of Nigeria.

   Nigerian Goat Meat Pepper Soup is one of the popular Nigerian Pepper Soup recipes.
   Like most Nigerian pepper soups, it is hot and spicy. The only difference is the use of goat meat(as the name implies). 

Goat meat has a distinct smell, that differentiate it from other meat.
   To prepare this soup, all edible part of the goat can be used. It is very common to see assorted part of the goat used  for making pepper soup,such as the offals (tongue,liver, kidney or heart) but in the absence of assorted parts, you can  make use of the red meat alone.

Ogbono and Egusi Soup : How to Cook Ogbono and Egusi Soup combo



 Ogbono and Egusi soup is a delicious combo you'll surely enjoy.
 It is a very common way to merge these two Nigerian soups (Ogbono soup and Egusi soup) together without having to cook two separate pots of soup.
 So if you love egusi and ogbono and can't decide which you'll love to prepare, then do try out this ''combination soup'', you'll be glad you did.


Ogbono and Egusi Soup ingredients
•  1 handful of Ogbono Seeds OR 2 handful ground Ogbono powder
•  1 cup ground Egusi/melon seeds 

• Assorted Meat and Fish: (could be a mixture of any of these :Beef, cowfoot, Shaki(tripe),Ponmo(cow skin) DryFish  & Stock Fish)
• 2-3 Cooking spoonful Palm Oil
• Vegetable :Spinach OR Pumpkin leaves(ugu) OR Bitter leaf(onugbu)..or a mixture of bitter leaf and Ugwu 
 
•Crayfish(as you like it)

It is also popular in other parts of west Africa and the cooking methods differs from place to place.

The common variations for cooking Egusi Soup include:
Variation 1: Egusi soup cooked with vegetables(either spinach/ugu, bitter leaves or a combination of both.
Variation 2: Egusi soup cooked without vegetables
Variation 3: Frying the ground egusi seeds before adding the palm oil and condiments
Variation 4: Boiling the assorted meat and fish, then adding the ground egusi seeds,with or without vegetables

Bitter leaf Soup also known as (Ofe Onugbu / Obe efo Elewuro or Miyan shuwaka) is a delicious traditional Nigerian soup.
  It is prepared with a bitter leaf (Vernonia amygdalina) and although the name suggest that it is a bitter soup, that's not the case.The bitter leaves used for this soup ,are properly  washed and squeezed ,until there is only a slight taste of bitterness left.

*Food Note: Bitter leaf soup is known as ''Ofe Onugbu'' in Igbo language, where ''Ofe'' stands for ''soup'' and ''Onugbu'' stands for ''bitter leaf''.
It is called  Obe efo Elewuro in Yoruba language, where '' obe'' signifies ''soup'' and '' efo elewuro'' stands for ''bitter leaf''.
  In Hausa language it is ''Miyan shuwaka'', where '' Miyan '' denotes ''soup'' and '' shuwaka'' stands for ''bitter leaf''.

Bitter leaf (Vernonia amygdalina) is a vegetable used for preparing the popular Bitter leaf soup. It is also known as Onugbu, Shiwaka & Ewuro by the Igbos, Hausas&Yorubas in Nigeria.

Although this plant has been around for hundreds of years, only a few people know of its medicinal and healing properties.

  Bitter leaf (Vernonia amygdalina) as the name implies, is actually a bitter plant whose leaves, extracts, stems and barks are used for culinary,medicinal and curative purposes.  
  Vitamins in Bitter leaf includes;Vitamin A, Vitamin C ,Vitamin E, Vit.B1 and Vit.B2.
 
My grandma was a big fan of the bitter leaf juice, and on one of my visits she made me drink the juice to cure a fever. I hated the bitter taste, at that time, but when I realized the fever was gone, I humbly joined the Bitter leaf fan club ... .... those grey hair on her head ain't there for nothing, Right?.

   During my varsity years, the sandwich toaster was every student's best friend, 'cos you can easily pop in 2 slices of bread, an egg and some veggies and taddam! you have a yummy ''Naija style toast bread'' for breakfast.
   I have always wondered what else I could do with my bread toaster; so imagine my excitement
yesterday, when I got a message from a subscriber, who wanted to know if she could make a cake without a cake mixer & an oven. She also stated that, as a campus student she only owned a stove and a sandwich toaster, so I thought, why not give it a try?
  And now, foodies, I present to you a yummy, soft and spongy Cake, made in a Sandwich Toaster .... Enjoy!
